"At Applegarth we keep sheep, some cattle and rare breed pigs. These pigs have been part of British farming for years. Being adaptable and responsive, they are ideal for small-scale breeders. They are slower to mature and produce a slightly fattier carcass than commercial breeds and this improves the flavour. Cornvale decide at what stage they want to take the pigs and often come on to the farm to see how they are doing. Working with Cornvale is an ideal situation for us; we have the satisfaction of breeding and rearing the pigs we love and Cornvale sell the finished product to people who appreciate tasty meat, produced in a relaxed environment." |
